- Server - Dedicated to customer service and experience. The server position (front of the house), is core connection between customer and restaurant. All servers must comply with Delmonico's 4D's to service : Dedication, Diligent, Desire and Duty.
- Bartender / Barista - Bartending and Barista positions require a minimum of 2-years experience and the applicant must comply with Delmonico's 4C's to service : Concise, Consistent, Curious and Caring.
- Cook - If the front of the house is the gatekeeper to the customer's experience, then the heart of the house (a.k.a. back of the house), is gatekeeper to the customer's enjoyment, discover and safety. Cook's are hired and mentored by one of the island's most respected Chef, Eddie Chien. All cooks must comply with Delmonico's 4S's to service: Skill, Safety, Surprise and Sacrifice.
- Kitchen Assistant - No kitchen can function without the care and dedication of the unsung heroes, the Kitchen Assistants. The K.A. scrubs, cleans and helps prepare the heart of the house each and everyday. Kitchen Assistant positions require a combination of brain and brawn and is not for the weak of heart or mind. All kitchen assistants must comply with Delmonico's 4A's to service: Attentive, Accurate, Assertive and Attendance.
